The courses are held in Pizzeria Libau, a real Italian restaurant with a top quality stone oven. Located in the center of Berlin, the restaurant is 200 meters from the metro station Warschauer Strasse.
The president of Accademia Pizzaioli is one of the most influential person in the world of pizza in Italy and abroad. Mr Enrico Famà changed the way of thinking about pizza bringing innovation, quality and competence. He is also president of Accademia della Ristorazione and the founder of the World and European Championships of Pizza. He also created the competitions of free-style Pizza, and the pizza making speed contests.
Finally Mr. Famà was the inventor of the stage race ‘Giropizza d’Europa’, of the female pizza championship ‘Pizza in Rosa’ and of the television program ‘Master Pizza Chef’
Gianluca has completed with success the most advanced courses of Accademia Pizzaioli Italy, achieving the title of Master Pizza Instructor.
After getting experience in many pizzerias around Italy, he decided to move to Berlin and bring his knowledge to the German capital where he co-founded Berlin Makes Pizza.
Gianluca often goes to Italy to get more specialization courses offered by Accademia Pizzaioli.
The theory is necessary for knowing the rules and basic chemistry behind all the ingredients that are used for the production of the pizza dough: flour, water, yeast, salt, oil and many others. With this knowledge students will be able to knead and prepare any kind of pizza dough. The theoretical module includes also information about ovens types, ingredients and preparation of the toppings/garnitures and cooking times.
The practice is made in specialized laboratories with all the tools and materials necessary for a professional pizza production.
The student will start immediately to work with pizza supervised by the trainer who will follow all their steps and give feedbacks. During the practice time, the student will produce several pizzas following all the steps: kneading of the dough, preparation of dough portions, techniques to stretch the dough and preparing it for the baking in the oven.
In the intensive course everyone will be able to prepare, bake and eat his own professional pizza.
